TAKE IT ONE STEP AT A TIME
The method, in detail
Step-by-step mode is on. Only your current step is shown; use the controls below to move through the recipe.
01
Prepare fully cooked cockles
Use cockle meat labelled fully cooked and ready to eat. Follow the package storage, thawing and preparation instructions. Drain, check for shell fragments and weigh 250 g of meat.
Kitchen note Keep chilled until needed. A product described only as blanched or requiring cooking is not a ready-to-eat substitute.
02
Slice and dry the vegetables
Cut cucumber into fine sticks, onion into thin slivers and carrot into matchsticks. Cut the washed garlic chives into short lengths. Dry the vegetables well.
Kitchen note If cucumber is very watery, remove the soft seeded centre. Excess water dilutes the sauce.

03
Mix the dressing
Combine 1 tbsp each of gochujang, gochugaru, soy sauce and rice vinegar. Stir in 2 tsp sugar and 1 tsp minced garlic until evenly mixed.
Kitchen note Begin with less chilli for a milder version. Keep the sesame oil and seeds for finishing.
04
Fold gently
Put the cockles and vegetables into a clean bowl. Add about half the dressing and gently fold with a spoon. Taste and add more dressing only as needed.
Kitchen note Do not crush the cockle meat or pour in all the sauce before tasting.

05
Finish and serve
Fold in 1 tsp sesame oil and scatter over 1 tsp toasted sesame seeds. Serve immediately with warm rice. Alternatively, spoon a little salad over rice and mix at the table.
Kitchen note Dress only what you intend to serve now for the best vegetable texture.

CONFIDENCE IN THE KITCHEN
Technique, variations & storage
This is a home adaptation
The reference short shows cockles being shelled and a finished red-dressed vegetable salad. It does not identify the full seasoning formula, quantities or cooking conditions. Our measured version uses commercially prepared ready-to-eat cockles for a simpler home method.
Handling and leftovers
Keep seafood refrigerated at 4°C or below and follow the product use-by instructions. Refrigerate prepared salad promptly, within 2 hours, or within 1 hour when the surrounding temperature is above 32°C. Keep utensils and surfaces clean. Serve freshly mixed for the best texture.
This clip does not teach cooking raw cockles. Use a trusted species-specific cooking method and fully cook them before making this salad. Do not treat briefly opening the shells, soaking or adding vinegar as a complete food-safety step.
Questions beginners ask
Is this the exact restaurant recipe?
No. It is our two-serving home adaptation inspired by the appearance of the Suncheon dish. The reference has no measured recipe.
Is 250 g the shell-on weight?
No. Weigh 250 g of fully cooked, shelled and drained meat. Shell-on weight is not interchangeable.
Why is the salad watery?
Drain cockles and dry vegetables thoroughly; dress immediately before serving.
Can I make it less spicy?
Reduce gochugaru, use mild gochujang and add the dressing gradually.
